Today’s winery spotlight shines on 1693 Distillery, located at 21 Luckenbach Road in Fredericksburg, TX. This family-owned distillery was built from the ground up and founded on one simple idea: to embrace the spirit of the Hill Country through the careful crafting of premium whiskeys and agave spirits.

1693 Distillery, veteran-founded, is so-named for the elevation of the distillery at 1,693 feet, reflecting the high standards we meet and exceed each and every day. Here, you can enjoy rich and flavorful whiskeys made in the heart of Texas, as well as their own take on Texas tequila: Elevación Agave Spirit crafted from 100 percent Mexican agave.

In the tasting room, you and your guests can sip whiskey and tequila flights, check out a craft cocktail or Jell-o shot, snack on tasty food from the onsite truck, or listen to live tunes on the weekends.

1693 Whiskey

There are three types of 1693 whiskey you can try:

  • Bourbon whiskey
  • Light whiskey
  • Rye whiskey

Aged between two and four or more years, this 88-proof small batch whiskey is bottled in Texas Hill Country. Each one boasts its own aroma, from sarsaparilla and butterscotch, to hibiscus and molasses. Whether you like a pepper finish or tea finish, you’re sure to find something you love here.

Elevación

Meeting at the intersection of the heart of Mexico and the soul of Texas, Elevación is crafted from agave grown in the sun-drenched fields of Mexico and finished right here in Fredericksburg. Offering a fresh spin on a timeless spirit, each bottle of Elevación brings the earthy character of agave paired with a smooth finish.

Choose from two types of Elevación:

  • Blanco
  • Reposado

This 80-proof tequila features triple distilled 100 percent Mexican agave with colors ranging from crystal clear to light amber tint. Whether you like a light peppery finish or the sweetness of vanilla and agave nectar, there’s a bottle of Elevación waiting here for you.

Tastings include:

  • 1693 Flight (bourbon, light, rye)
  • 1693 Premium Flight (selection of single barrel cask strength whiskeys)
  • Elevación Flight (Blanco, Reposado, Añejo)

There are pours and mixed drinks available, as well as cocktails such as Hill Country Lemonade, Sweet Potato Old Fashioned, and Peach Coolio. Food is limited to light desserts and Opa’s Sausage.

If you like to buy in bulk, try a bundle of three or four bottles to save some money and mix it up. If you can’t get to the tasting room in person, you can always buy some of your favorites in the 1693 Distillery shop.
